Armadillo Eggs?!?!

These are AMAZING...you gotta try em!!
Armadillo Eggs..
You'll need Jalapenos, cream cheese, sausage, and shake n bake

Roast the jalapenos for several minutes in the broiler. Cook the jalapeno/blacken the skin. Remove from broiler and place jalapenos in a zip-lock bag and let sweat. Peel off the skin of the jalapeno. Slice the jalepenos down one side and deseed. Rinse.
Stuff the jalapeno with Cream cheese.
Surround and cover the jalapeno with sausage
Coat with shake n bake
Bake for 35-40 minutes until sausage is cooked.

mmmm...DELICIOUS!
These are definitely not gentle on the waistline so try fat free cream cheese and a lower fat sausage.

Bahrain


This map shows where Bahrain is located in the Persian Gulf. Its a little tiny island off the coast of Saudi Arabia. This is where Rodolfo will be for 4 months. :(

Roo and Iz




Ruger and Isabelle are loving the warmer weather. We have gone for a walk everyday for the past 4 days! Its been in the 40's and is suppose to stay warm for the next week. Early spring here in Alaska?? I hope so!
Last Friday, Rodolfo found out he will be deploying to Bahrain for 120 days. As of now, he will be leaving around the 15th of July. Everyone we have talked to have said that Bahrain is an AMAZING place and that Rodolfo will love it there.
Rodolfo also found out today that he won CE Airman of the Quarter. WAY TO GO RODO!!!
I got a new job in Fairbanks at the Holistic Medical Clinic. I start on April 1st and am extremely excited!!
Isabelle got spayed last Monday and she doing extremely well. She didnt feel so hot the 1st day but woke up the next morning as fiesty as ever. :)
Lots going on here in Alaska at the Carrera household! We are definitely staying busy!

I got a new tattoo a couple days ago..I think it turned out pretty good! :)
